Quick Vegetarian Chili

Ingredients
1 TBS Olive oil3 cloves garlic1 onion, chopped1 tomato, diced (optional. I had an overripe on I needed to use.)16 oz can of pinto beans, drained and rinsed16 oz can of black beans, draind and rinsed1 can of S&W Louisiana Red Beans (KEEP THE JUICES)1 can of diced tomatoeschili pepper, cumin, salt and pepper to taste
Directions
Saute onions and garlic in olive oil until carmelized. Add the rest of the ingredients and bring to a boil. Simmer for about 15-20 minutes. Serves 6.
