Cottage Cheese Pancakes w/ Ricotta

Ingredients
1/2 c. whole wheat flour1/2 c. white flour1/2 t. baking soda1 c. nonfat milk1/2 c. cottage cheese1/2 c. ricotta cheese2 eggs1 T. honey
Directions
Mix flours and baking soda in a large bowl. Mix in milk, cheeses, eggs and honey. Mix until batter is combined. Use a 1/3 c. measuring cup to drop onto hot griddle sprayed with cooking spray and cook on first side until small bubbles appear. Flip and cook on remaining side just until firm. Makes 4 servings of 3 pancakes.
