Nebraska Bran Muffins

Ingredients
3 cups bran flakes1 cup boiling water2 eggs1 cup honey or 1-1/4 cup sugar2 cups low-fat buttermilk1/2 cup corn oil2 cups whole wheat flour1/2 cup soy flour2-1/2 teaspoon baking soda1/2 teaspoon salt
Directions
In a large bowl, mix bran flakes & boiling water and let stand for about 5 minutes. In a medium bowl beat eggs, honey, buttermilk and oil; add to bran. Sift together whole wheat and soy flours, baking soda and salt and fold into bran mixture. Bake @ 375 degrees for 15 minutes in a muffin tin. (The addition of soy increases the prtein content and usability.) The batter may be refrigerated in covered jars several weeks. Makes about 30 muffins.
