60 Ritz crackers2 c. sugar2 tsp. baking powder2 tsp. vanilla6 egg whites2 c. pecansWhipping cream or Cool Whip
Crush Ritz crackers. Combine nuts and baking powder with crackers. In separate bowl beat egg whites, vanilla and sugar until fairly stiff. Fold egg white mixture into cracker mixture.
Pour in greased pan (9 x 13 inch). Bake 30 minutes at 350 degrees. After cooled cover with Cool Whip or whipped cream. Refrigerate for 4 hours.
