Stir together:1/3 c sugarzest of 1 lemonPreheat oven to 425Spray Muffin tin (dozen) with cooking spraySimmer:1c. Blueberries1tsp sugar-simmer and mash...down to a little more than 1/4 cup, set aside to coolWhisk together:2 1/2 c. flour2 1/2 tsp baking powder1 tsp saltIn separate bowl, mix until well combined:1 1/8 c. sugar2 eggsWhisk in:1/4 c. canola oil4 tbsp melted unsalted butter1 c. lowfat buttermilkFold above wet ingredients into flour mixture along with:1 c. blueberries-Spoon mixture into muffin tins, filling to the top.-Put about a teaspoon of reduced blueberry mixture on the top of each muffin, swirling in with a skewer or knife (no need to be gentle!)-sprinkle lemon/sugar on top.Bake 17 minutes or so, rotating halfway if you don't have a good convection oven. Let cool for about 5 minutes before taking out of the pan.
