Almost Fat Free Fried Rice

Ingredients
2 cups jasmine rice 2/3 cup shredded carrots 1/2 cup frozen green peas 2 or 3 Green onions Butter Flavored cooking spray Egg Beaters equivalent of 2 eggs Soy sauce to taste Sesame oil, to taste = optionalSalt & Pepper to taste
Directions
In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes, while simmering throw in frozen peas.

Heat wok over high heat. Coat with cooking spray, then stir in carrots & green onion; cook about 30 seconds. Pour in egg beater, stirring quickly to scramble eggs with vegetables. Stir in cooked rice & salt & pepper the rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again. Let fry for a couple minutes, stirring the whole time.

*Note: To easily chop green onions, use kitchen scissors and cut it over the pan, takes 1/2 the time as chopping.*

    great recipe! Made a few changes but just for preference sake: added garlic, thai basil, used brown rice instead of jasmine, and sambal oelek (asian chili sauce). - 9/27/09
