Jolyn's Pineapple Chicken Stir Fry

Ingredients
1 lb chicken breast, cubed1 T olive oil1 pkg frozen stir fry veggies4 slices canned pineapple cubed4 T lower sodium teriyaki sauce/marinade1 cup brown rice, uncooked
Directions
Cook rice according to package instructions. When there is approx. 10-15 minutes left with the rice, begin browning the chicken in a large skillet w/ olive oil (approx. 5 min.). Add veggies, pineapple, and teriyaki sauce, heat to boiling, then reduce heat and simmer 5 minutes. Stir in cooked rice and serve. Makes approximately 5 or 6 1-cup servings.
