Santa Fe Beanr & Rice Casserole

Onions, raw, .5 cup, chopped (remove)Garlic, 2 tsp (remove)*Extra Light Olive Oil, .5 tbsp (remove)Salt, 1 dash (remove)Chili powder, .5 tbsp (remove)Pepper, black, .5 tbsp (remove)Beans, red kidney, 1 cup (remove)Beans, black, 1 cup (remove)Milk, 1%, .75 cup (remove)*Brown Rice, long grain, 1.5 cup (remove)Egg, fresh, 2 large (remove)Cheddar Cheese, 1.5 cup, shredded (remove)Green Peppers (bell peppers), 1 cup, chopped (remove)
•Heat oven to 350 degrees and spray a casserole dish with EVOO spray.
•In a skillet, cook the onion, garlic, and EVOO on Medium High until tender. Add the salt and chili powder.
•In a large mixing bowl, mix together the pepper, milk, beans, COOKED brown rice, eggs, cheddar cheese, and green pepper.
•Pour mixture into casserole dish and sprinkle with extra pepper.
•Bake casserole for 25 minutes or until center is firm.
•Let cool 5 minutes and serve.
•Enjoy!
