Mexican Meatloaf with crispy squash

2 lbs ground beef2c. salsa2 eggs, beaten(1 c. bread crumbs, not in nutritional info; can omit)3-4 yellow squash1/4 cup chopped red onion2T butter
Mix beef, 1 c. salsa, eggs (and bread crumbs, if using). Mold into 2 loaves in a 9 x 13 pan. Bake at 350 for 40-50 minutes uncovered. Top with remaining salsa in the last 5 minutes.
Ten minutes before the meatloaf is ready, cut squash into small chunks. Saute chopped onion and squash in butter for 5-7 minutes. Salt and pepper to taste.
