Hazelnut & Raisins Rye Muffins

Flour mix: * *Flour, white, 1 cup * *Rye flour, light, 0.5 cup * Baking Soda, 1.5 tsp * Salt, 1 tspSoft mix: * Egg, fresh, 4 small * Banana, fresh, 3 medium (7" to 7-7/8" long) * Butter, unsalted, 0.25 cup Topping: * Raisins, 0.5 cup, packed * Hazelnuts, 0.25 cup, chopped
First heat the oven. Until it becomes hot, mix flour, baking soda, salt.
Then separately mix banana, melted butter, eggs; add to the flour mix. Mix it all until thick like cream.
Spray baking oil on baking paper, place in muffin tins and pour in mixture. Sprinkle chopped hazelnuts and raisins on each muffin.
Place in the oven on the highest rack and bake for 30 - 40 minutes or until a stick inserted in the center comes out clean.
Makes 18 servings.
