Gingery mushroom and tofu soup

Ingredients
1 can Coconut Milk1 Cup Fresh Mushroom, sliced1 can Diced Tomato 1 block tofu, cubed1 medium Onion, sliced2 tbsp Coconut Oil,1 tsp Ginger Root, grated1tsp curry powder1 clove garlic, pressed
Directions
Slice mushrooms and onions and sauté lightly in coconut oil in a medium sauce pan. Add the rest of the ingredients and simmer for about 25 minutes.
