Not Mom's Squash Medley

Ingredients
1 Butternut squash peeled, seeded and cubed3 yellow squash, chopped 3 zuchinni, chopped2 med. onion chopped2 apples (preferably Fuji) chopped2 tsp Cinnamon2 tsp Nutmeg1 tsp Cloves1 tbsp Rosemary1 tsp Thyme3 tbsp Olive oil3 tbsp white wine OR unsweetened apple juice
Directions
Preheat oven to 475 degrees.
Chop all the vegetables and apples, place in a large bowl. Sprinkle on the seasonings, add olive oil and either the wine or the apple juice. Toss together.
Spray a nonstick onto 2 large, shallow roasting pans. Pour veggie mixture in a single layer the pans. Place in oven and roast for 40 minutes, stirring several times.
Makes at about (12) 1 cup servings (I think, it's never lasted long enough for me to measure).
