Banana Fingers

4 med-small bananas1 tbsp lemon juice1 2/3 cup whole wheat flour (I used Power Flour from Tosca's book)1 tsp baking powder1/8 tsp sea salt1 cup cold butter, cut into small pieces2 cups oats2 large eggs, slightly beaten1 1/4 cups raw cane sugar
Preheat oven to 350 degrees.
Peel and slice bananas thinly. Cover with a mixture of lemon juice and cold water.
Combine flour, baking powder and salt in a large bowl. Use a pastry blender to cut butter into flour until mixture looks like fine crumbs.
Stir in oats and sugar. Mix in the eggs and blend until the mixture becomes a stiff dough.
Put half into a 13x9 inch baking pan. Press down firmly. Add drained sliced bananas in a thin layer on top. Top with remaining dough mixture.
Bake for approx 30 minutes or until golden brown.
Cool completely then cut into bars.
