4 large eggs4 egg whites1 small zuccini sliced5 or 6 large mushrooms sliced1 bunch (approx. 1 cup) Kale or spinach1/2 onionRed pepper FlakesSalt & pepper2 Tbsp Shredded Parmesan Cheese
Saute kale, onion,mushrooms and zuccini until just soft. Place in ceramic or glass quiche pan sprayed generously with Pam. Mix eggs and egg whites together well. Add red pepper flakes, salt and pepper to mixture. Add 2 Tbsp. grated parmesan cheese. Pour over sauteed vegetables. Bake at 350 degrees for 25 or 30 minutes till toothpick comes out clean. Cut into 4 servings.
