Nimbu Bhat (Cashew Lemon rice)

4c water2c rice1 tsp salt4 tbs ghee or oil1 c roasted cashews3 tbs black mustard seed2 tbs Urad dal(yellow split peas can be sunstituted)2/3 tsp turmeric2'/3 c lemon juice
Boil water in a large stock pot or dutch oven.add rice, salt, and 1 tbs ghee or oil. Cover and cook til all liquid is absorbed. remove from heat and set to side, still covered. in a sautee pan, heat rest of ghee or oil. add mustard seeds and urad and fry til mustard seeds turn grey and start popping, and urad turns a reddish brown. add all to rice, along with cashews, turmeric and lemon juice. stir gently til all rice is yellow. serve hot or cold, tastes great either way!
