Whole Wheat Apple Pie Oatmeal Pancakes

1 cup whole wheat flour⅓ cup old fashioned oats1 teaspoon baking powder¼ teaspoon baking soda½ teaspoon cinnamon¾ cup No Sugar Added apple pie filling½ cup low fat yogurt¼ cup egg substitute1 teaspoon vanilla extract⅓ cup soy milk
1. Heat a lightly oiled griddle over medium-low heat.
2. In a bowl, mix the flour, oats, baking powder, baking soda, and cinnamon. In a separate bowl, mix pie filling, yogurt, egg substitute, and vanilla. Stir applesauce mixture and milk into the flour mixture until evenly moist and thick.
3. Scoop about 1/4 cup batter (just use a #2 serving scoop to make it easy) for each pancake onto the prepared griddle, and cook, turning once, until golden brown on both sides.
Note: This batter can be a little sticky, so make sure your non-stick pan is properly non-stick and that's it's reasonably well-greased.
