Corn and Black Bean Salad or Dip

Ingredients
1 can Corn, drained1 can Black Beans, drained and rinsed1 diced Red or other color Bell Pepper (not yellow)1 diced Jalepeno1 cup diced sweet onion (Vidalia)2 tsp salt2 TBS Lemon Juice (or from one lemon)1 TBS Olive Oil3-4 TBS Basil chopped
Directions
Add all ingredients and refrigerate for at least 1 hour or overnight for best flavor. Very colorful and great as dip with tortilla chips or as side salad.

Makes approx. 9 servings of 1/2 cup
