Irene's Meatball's

2 lbs ground turkey1 cup plain bread crumbs3/4 cup parmesan cheese1/2 cup milk1/2 cup beef broth1/2 cup fresh minced parsley 3 eggs beaten2 Tbsp oregano1 Tbsp garlic1 Tbsp kosher salt1 Tbsp black pepper2 tsp dried basil1 tsp red pepper flakes
Preheat oven to 450. Mix allingredients together and form 24 meatballs (medium in size) and place on cookie sheet sprayed with Pam. Bake for 25 minutes.
The turkey can be at little sticky to handle vs. beef you haven't expeirenced this before. Don't over work and try to make a perfect ball just get it in the clump and place on the cookie sheet, they don't expand out much mostly up so you do not have to leave a lot of space on the cookie sheet.

We have had to recently start a low fat, low cholesterol, low sodium diet (which my husband will say means low taste, but he LOVED these meatballs. I substituted 3eggs for the equivalent in egg beaters, I used low fat low sodium beef broth and used about 1/2 the salt. It was so easy and worth it. - 8/10/10
