Turkey Proscuitto Roll-ups

Ingredients
Proscuitto, 1.5 ozTurkey breast cutlets, 1 lb.Salt, 1/8 tspPepper, black, .1/8 tsp Sage, ground, 2 tsp Olive Oil, 1 tbsp
Directions
Place cutlet between 2 sheets of plastic wrap and pound to 1/4" thickness. Sprinkle both sides of each cutlet with salt and pepper. Divide prosciutto into equal portions (proportionate to the number of cutlets), and place 1 portion in the center of each cutlet. Sprinkle with 1/2 tsp. sage. Roll up cutlets, jelly roll style, starting with narrow end. Secure with a toothpick. Heat oil in a large skillet over medium high heat. Add cutlets to pan, cook 6-10 minutes or until cooked thoroughly and brown on all sides.

    Replace Proscuitto (37 calories) with 1/2 ounce ( 1/2 slice) of mozzarella cheese (43 calories). This only adds 6 calories to recipe but Proscuitto is expensive and not always available at my local grocery. Still tastes great! - 12/25/17

    OMG! This is fantastic! I didn't change a thing. The cutlets can be a bit awkward to cook (b/c they're rolled up). But not really a big deal, just make sure you cook them all the way through. I took leftovers the next day to work cut up over salad. Btw, prosciutto is italian cured ham, found in deli - 2/1/11
