Eggplant 'Cheese Steak'

2 tbsp Olive Oil1 whole onion (cut into strips)1 whole green pepper (cut into strips)1 whole Eggplant (cut into strips)2 cloves Garlic (crushed or diced)1 tbsp All Purpose Flour1/4 c Veggie Broth1 tbsp Worcestershire Sauce (We use a vegan variety)Thin Sliced Reduced Fat Provolone Cheese
Warm oil in a wok or large saute pan.
Add onions and bell pepper. Cook until firm but wilted.
Add Garlic and stir until well blended.
Add flour and coat all veggies.
Add Eggplant and stir well.
Add Veggie Broth and Worcestershire Sauce. Mix well. Reduce heat to low, cover and cook 5 minutes.
Place mixture in whole wheat buns, on wraps or alone with one slice of cheese on top! Enjoy!
