My Ultimate Oatmeal Chocolate Chip Cookie

Ingredients
1 1/4 c. packed brown sugar1 c. butter, softened1 tsp. baking soda1 tsp. ground cinnamon1/2 tsp. salt1/2 Tbsp. flaxseed2 eggs1 tsp. pure vanilla extract3 c. quick-cook or old-fashioned oats1 1/3 c. whole wheat flour1 (12oz) pkg. dark chocolate baking chips
Directions
Preheat oven to 350 degrees. Beat all ingredients except oats, flour, and baking chips in a large bowl with electric mixer on medium speed or mix with spoon. Stir in oats, flour, and baking chips or anything else you want to add.

Drop dough by rounded tablespoonfuls about 2" apart onto ungreased cookie sheet. Bake 9-11" or until light brown. Immediately remove from cookie sheet to wire rack. Makes approx. 55 cookies. (Nutritional value calculated for 55 servings).

    good recipe, but must bake at 325 or burnt chocolate chips on bottom. I swap out the butter for peanut butter (and some coconut milk if more liquid is needed), for the extra fibre and flavour. - 6/8/15
