low fat jalapeno poppers

Ingredients
4 jalepenos 1/4 cup fat free cream cheese2 tbsp cheddar2 tbsp reduced fat mexican cheese1/4 tsp garlic powder1/8 cup bread crumbs
Directions
slice the jalapenos in half and remove the seeds
Mix cheeses and garlic into a paste
stuff cheese into jalapenos
sprinkle with the bread crumbs
bake 400 degrees for 20 minutes
serves 2

    This is actually very close to what I make, except I use goat cheese (herb and garlic), and reduced fat cream cheese, and a small amount of 2% sharp cheddar that's been shredded. and some chopped tomatoes and cilantro. The bread crumbs on top get nice and crispy and the jalapeno holds in the cheese - 7/27/10

    That sounds good. I'll have to try that. I grew Jalapenos in my garden. Now we have a ton of them.
