Sauteed Zucchini with garlic

2 tbsp olive oil2 zucchini, slice 1/4" thick2 scallions, chopped1 tsp crushed garlic2 tbsp chopped parsley2 tbsp Frontier Organic Low Sodium Vegetable broth powder2/3 cup water
In a large skillet, heat oil, over medium-high heat. Add zucchini, scallions, and garlic. Saute for 6 to 8 minutes, or until zucchini is tender.
Mix broth powder with the 2/3 cup water and slowly pour over zucchini. Stir in parsley. Simmer for 1 1/2 to 2 minutes. Season to taste.
*You can replace the broth powder and water with 2/3 cup canned vegetable broth.
