Black Eye Banana Muffins

Ingredients
1 cup rolled oats1/2 cup whole wheat flour2 bananas, mashed1/4 cup raw agave nectar1/4 cup fat free yogurt2 egg whites1 tablespoon baking powder1/2 teaspoon vanilla extract1/2 teaspoon ground cinnamon12 blackberries3/4 cup slivered almonds
Directions
Preheat oven to 350 degrees F. Lightly grease a muffin pan with non-stick spray.

Combine flour, oats, baking powder, and cinnamon in a large bowl. When combined, set aside.

In a separate bowl,thoroughly mix all remaining ingredients EXCEPT almonds and blackberries. Add this mixture to the dry ingredients and mix gently until combined.

Spoon some batter into each of the 12 muffin wells NO HIGHER THAN 1/4 full. Place one blackberry in the center of each, then top with remaining batter. Sprinkle tops of muffins with slivered almonds and place in the oven.

Bake at 350 degrees F for 15-18 minutes or until edges are browned and almonds start to get aromatic.

Leave the muffins in the pan for 2-3 minutes before moving them to a wire rack to cool.

Makes 12 muffins.
