* Cucumber (with peel), 1 cucumber (8-1/4") * Red Ripe Tomatoes, 1 large whole (3" dia) * Olive Oil, 2 tbsp * Lemon juice, 2 tbsp
Directions
Chop up cucumber and tomatoes. Mix in bowl with olive oil and lemon juice. Serve cold.
