Vegan No-Bake Peanut Butter Pie

For the filling:1 container (8oz) Tuffuti cream cheese1 cup peanut butter0.5 cup sugar1 tsp vanilla extract8 oz frozen whipped toppingFor the crust:1.5 cups crushed graham crackers0.25 cup sugar0.3 cup Earth Balance (or other vegan butter alternative)
To prepare the crust, combine 1/3 cup sugar with the crushed graham crackers and Earth Balance. Press into the bottom of a pie pan. I don't go up the sides because I always end up making a mess, but if you'd like to, go for it!
To prepare the filling, blend the cream cheese with sugar until smooth. Add in the peanut butter and vanilla, and then once that's all together fold in the whipped topping. Pour into the pie crust and refrigerate for a couple of hours. If you must have it soon though, throw it in the freezer for a few minutes.
