PJ's enchilada casserole

Ingredients
1 green pepper, chopped1 yellow pepper, chopped1 red pepper, chopped11 white corn tortilla shells, quartered4 Jalapeno peppers, chopped3 cups chicken breasts8 oz of low fat cheddar cheese3 - 6 cloves of garlic, minced1 raw onion, choppedapproximately 1 cup cilantro, raw, chopped15 oz tomato sauce2 Tbsp chili powder (2.5 for additional kick)
Directions
chop up the vegatables and peppers
Boil the chicken, allow to cool then shred
shred cheese
pre-heat oven to 375
cut tortillas into quarters
mix together onion, cilantro, garlic, tomato sauce and chili powder to make sauce
mix together all remaining ingredients, except cheese, to make chicken mix
spray bottom of casserole dish with cooking spray then spread some of the sauce
then cover with tortilla quarters
then add chicken mix
then add 3/4 of the cheese, then cover with remaining tortilla quarters. cover with remaining cheese and remaining sauce
Place dish in oven for 30 minutes
remove, allow to cool, cut into 10 servings and serve with low fat refried beans and low fat spanish rice
