Yellow Thai Curry with chicken, apple, and celery

Onions, raw, .5 cup, chopped (remove)Ginger Root, 4 tsp (remove)Garlic, 3 clove (remove)*Coriander seed, 1 tsp (remove)Nutmeg, ground, 1 tsp (remove)Cinnamon, ground, 1 tsp (remove)*Cumin seed, 1 tsp (remove)Turmeric, ground, 1 tsp (remove)Brown Sugar, 12 tsp packed (remove)*Taste of Thai Lite Light Coconut Milk, 1.66 cup (remove)Tomato Paste, 0.062 cup (remove)Celery, cooked, 2 stalks (remove)Chicken Breast, no skin, 8 ounces (remove)Apples, fresh, 1 large (3-1/4" dia) (approx 2 per lb (remove)Indian, Aromatic Basmati Rice, aprox 3/4 cup, 2 serving (remove)Lime Juice, 0.063 cup (remove)
Directions
Cook rice.

Spices, onion, and coconut milk in a bowl or food processor until smooth.

Cook chicken and celery.

Add spice mixture.

Add apples.

Let cook for 10-15 minutes.

Pour over rice and serve.
