Pecan Blondies

Ingredients
1/2 stick butter1/4 cup unsweetened applesauce1/3 cup coconut palm sugar1/4 - 1/3 cup maple syrup 2 eggs 1 teaspoon vanilla 1 cup whole wheat flour, sifted1/4 cup flax seed meal1/3 cup protein powder1/2 TBSP. baking powder 1/2 teaspoon salt 1/2 cup chopped nuts, pecans preferred
Directions
In a large bowl combine the butter, applesauce, brown sugar and white sugar. Beat the mixture until it is smooth and fluffy. Stir in the eggs and vanilla. Beat again, making a smooth, satiny mixture. Add the sifted flour, baking powder, protein powder and salt. Mix with a big spoon until the batter is thick and smooth. Stir in the nuts if desired. Turn this batter into a well oiled 8 x 8 square baking pan. Bake at 350 degrees for 20 to 30 minutes. The bars will rise up and then fall slightly. Remove from the oven when done. Allow the bars to cool before cutting into 9 pieces. If desired you may frost these with chocolate or vanilla frosting.
