Easy 5 Ingredient Raspberry Sherbet

Ingredients
1 cup pureed & sieved fresh raspberries2 cups plain low-fat yogurt1/2 cup sugar3 egg whites1.5 teaspoons vanilla
Directions
Mix together the pureed/sieved raspberries, yogurt & sugar.

Freeze to slushy consistency

Beat egg whites in a chilled bowl until they are light and fluffy ( soft peaks ).

Add vanilla and beat another 30 seconds.

In another bowl beat the fruit mixture, fold in the egg whites and return to freezer. Freeze approx 2 - 3 hours until just firm - turn mixture into bowl and beat again until light and fluffy.

Cover with plastic wrap and freeze for 2 hours until semi-soft.

It is best to freeze the mixture in a glass container - freezing the misture in some metal pans may cause the mixture to discolor.

Makes 8 1/2 cup servings
