Sandy's Chicken Salad

Ingredients
16 ounces cubed chicken2 cups drained chunk pineapple packed in its own juice2 cups seedless red grapes2/3 cup dry roasted peanutsDash of salt1 cup Fat free Mayonnaise2 tablespoons lemon juice2 tablespoons pineapple juice
Directions
Cut cooked chicken breast into chunks.Open and drain pineapple. Wash and stem grapes then cut in halves. Prepare and dice celery. Combine chicken, pineapple, grapes, celery, and peanuts. Add salt to taste. Toss lightly and add the dressing made by combinine the FF Mayo, lemon juice, and pineapple juice. Mix. Chill. Serve on lettuce leaf. Makes 8 servings approximately 1 cup each.
