Kale and Veggies

Ingredients
Olive oilpine nutsonionmushroomszucchinikalecarrotschicken broth Tony Chachere's More Spice SeasoningCrushed red pepper
Directions
heat a tablespoon of olive oil
saute pine nuts until lightly browned. remove from oil and place aside on paper towel.
In same skillet with the oil, add diced onion and diced carrots
Cook until onion is at least carmelized and carrots are al dente
Add kale, mushrooms, zucchini, and seasoning to taste
poor 1/2 Cup of chicken broth in the skillet
cover with lid
Cook just a few minutes until kale turns a beautiful blue-green color
Remove from heat, top with pine nuts, and serve with any of the following:
1) cooked egg noodles
2) rice
3) over a microwaved egg
4) or by itself if you would rather
Delicious, nutritious and different (not a salad!!)
