mexican chicken spinich bake

Ingredients
3 lbs chicken breast, large cubes2 bunches spinach1 onion diced2 tbs evoo29 oz rosarita enchilada sauce8 oz spinach
Directions
pre-heat oven 350
cube chicken
heat oil in large fry pan
cook chicken till almost done, add onion
meanwhile wash, drain and coarsely chop spinach
cook till chicken done
in 9x13 backing pan put half the spinach
then all chicken and onion
then top with remaining spinach
pour on enchilada sauce
top with cheese
cover bake 30 min
uncover bake 10 min
