Slow Cooked Chicken Enchiladas

Ingredients
1 can black beans1 large can Macayo Green Enchilada Sauce6 oz boneless skinless chicken breast4 corn tortillas3 oz colby jack cheese (grated)6 c rice
Directions
Cut chicken into 1/2" cubes. Wash and drain the beans. Cut tortillas up into small pieces. Put chicken, beans, tortillas and enchilada sauce in a slow cooker. Turn it on and let it cook for about 3 hours. Cook the rice about 15 minutes before eating.

Put rice on a plate, scoop the enchilada mixture on top and top with a small amount of cheese.

Enjoy! Makes 10 servings.
