Ingredients
3 avocados1/4 cup lemon juice1 large red onion1/4 cup parsley1 1/2 tsp cumin2 cloves garlic1 cup soaked sun-dried tomatoes1 jalapeno1 1/2 tsp sea saltRomaine Lettuce Leaves

Directions:
Cut avacados into chunks and pour lemon juice over it. Chop onion in food processor then add parsley, cumin, garlic, tomatoes, jalapeno, and salt. Process until smooth and creamy. Wrap avacados with creamy mixture in a lettuce leaf. Enjoy!

    The onion and jalapeno tastes are way too strong. The lettuce leaves kept breaking when I tried to wrap the filling in them. I ended up cutting up the lettuce and mixing it all together like a salad. - 10/3/09
