Spaghetti Sauce low sodium high flavor/protein

Ingredients
2 pounds extra lean ground turkey breast 1.5 cups chopped bell peppers1.5 cups chopped red onion1.5 cups sliced mushrooms1 stalk celery choppedleaves from the celery hearts chopped 3 cloves garlic4 tsp fresh ground pepper3 tsp oregano1 tsp basil1 tsp thymefresh italian parsleyred pepper flakes (1 tsp for spicy)6 oz red wine1 box POMI strained tomatoes (750g)1 can Hunt's no salt tomato paste
Directions
Put the turkey in a bowl and add the celery leaf, chopped fine, all the pepper, 1/2 the garlic and a portion of the other spices mix together with your hands until well blended.

Heat up your pan and start with just some onions/gr pepper/garlic - saute in a little wine and when it evaporates add the rest of the wine and the meat. Cover and let cook then turn the meat and cook other side. Crumble to desired size and then add the rest of the ingredients, stir well and let cook over med heat.

Makes 8 1-1/4 cup or 16 3/4 c. servings
