Breakfast quesadilla

Ingredients
eggs, cheddar, onion, refried beans on flour tortilla.
Directions
Makes 4 servings. This LOOKS a little small for a serving but the beans and tortilla are filling.
IN a large saute/frying pan, lay one tortilla, smeared with refried beans. Sprinkle on cheese.
In another smaller saute pan, saute onions in fats. When tender, sprinkle on tortilla. Do not clean out pan. Scramble eggs. Pour into warmed pan. Cook on med heat until done. Pour on top of tortilla.
Top with antoher tortilla. Heat on medium high until browned on bottom. Flip over, brown on other side. Cut into quarters (I use a pizza cutter) and serve!
