sweet potato & chickpea patties

Ingredients
2 medium sweet potatoes1 can chickpeas, rinsed1.5 small yellow onions, chopped2 cloves garlic, crushed2 T extra virgin olive oil1 T brown sugar1/4 c white whole wheat flour1/4 c parmesan cheesespices:1 t cumin1 t paprika1/2 t ground coriander seed2 t ancho ground chili powder1/4 t cayenne pepper
Directions
preheat oven to 355 degrees.

1. peel sweet potatoes and chop into thick chunks
2. boil sweet potatoes until tender
3. while sweet potatoes are boiling, add olive oil to frying pan and cook onions until soft. add garlic and cook until onions are translucent. add to medium sized bowl
4. toss drained sweet potatoes in the bowl, add chick peas (you may want to throw these into the food processor to make it easier).
5. add remaining ingredients to bowl. mix with potato smasher or fork tines until mushy consistency.
6. spray baking sheet with cooking spray
7. use 1/3 cup to measure out patties, evenly spaced on baking sheet

bake for 30 minutes or until browned on the outside.
Makes 9 patties (1/3 cup per pattie).
