Once-in-a-while Mashed Potatoes :)

Ingredients
15 Medium Red Potatoes2 tsp Salt1/2 cup Whole Milk6 tbsp Shredded Parmesan Cheese1 tbsp Sour Cream1 tbsp Light Butter
Directions
For added fiber, leave the skins on the potatoes. Wash them and cut in small pieces so they cook faster. Add salt to the pot, so that it absorbs as the potatoes boil. When the potatoes are done, drain them, put in a mixer and add the rest of the ingredients. Mix well and serve.
