Corn and Pinto Salsa

Ingredients

1.5 cups corn1.5 cups pinto beans1 can diced tomato (no salt added)1 medium onion, chopped1 T lime juicechopped garlic to taste (I used 1 tsp)Season to taste:cuminblack pepperoreganobasil
Combine all ingredients into a medium sauce pan and bring to a boil. Boil for about five minutes and then remove from heat.
You can serve this hot or cold, it is good both ways.
You can dip chips or vegetables (cucumbers work well because you can sort of scoop with them)
Makes about 5.25 cups (depending on the size of your onion, you may get 5.5)
And this will serve around ten people, depending on how much they like salsa and how hungry they are.
That's about 1/2 cup per person (a little more than that)
