Clay's Beef Barley Soup

Ingredients
1 pound roast beef (eye of round or similar) - chopped2 celery stalks - diced fine2 carrots - diced fine1 onion - diced fine1 onion - chopped2 potatoes - choppedBeef broth - fat free - 12 cupsCanned diced tomato - 14 floBeef oxo - 1 tspOregano - 1 tblsThyme - 1 tspOlive oil - 2 tblsGarlic diced - 2 tspHot pepper sauce - 1 tbls (or to taste)Salt and Pepper to taste
Directions
Dice celery carrots, and 1 onion fine.
In large pot saute on low with olive oil, about 15 mins.

Chop remaining onion, and potato.
Add to pot, increase heat to med-high.

Add garlic, oregano, thyme and diced roast beef.
Saute 5 mins.

Add all remaining ingredients except barley.
Bring to a simmer, cover reduce heat and simmer 1 hour.

2 hours before serving, add barley.
Continue on simmer stirring occasionally.

Makes 10 2 cup servings
