Clay's Coconut Rice

Ingredients
Directions
3 cups uncooked long grain rice,basmati is best1 3/4 cups cocunut milk3 1/4 cups water1 tsp canola oil2 tbsp honey1 tsp salt
Rinse rice well, till water runs clear.
Heat oil in sauce pan with tight fitting lid.
Add rice and stir to coat.
Add remaining ingredients.
Bring to a boil.
Stir, reduce heat to low, and cover for 15 mins.
Do not uncover from this point on.
Remove from heat and let stand 10 mins.
Uncover, mix/fluff gently.
Makes 8 1 cup servings
