Mustardy Oven Fried Chicken Breasts

Ingredients
2 lbs. boneless, skinless chicken breasts, divided into 6 pieces.Dash black pepper1/2 tsp. salt1/2 cup grated parmesan cheese2 Tbsp. yellow mustard1/4 cup bread crumbs1 egg
Directions
Sprinkle chicken with salt and pepper. Beat egg and mustard in a bowl. Combine parmesan and bread crumbs in a separate bowl. Dip chicken in egg mixture, then roll in cheese mix until coated. Put on cookie sheet and let sit for 10 minutes. Bake for about 30 minutes in a 350 degree oven. 6 servings.
