Poppy Seed Waffles (adapted from eating well)

Ingredients
2 tablespoons poppy seeds1 3/4 cups all-purpose flour1 1/2 teaspoons baking powder1/2 teaspoon baking soda1/2 teaspoon salt2 large egg whites1 large egg2 cups nonfat plain yogurt1/2 cup zero calorie sweetner (splenda)1 tablespoon butter substitute1 tablespoon vanilla extract2 teaspoons freshly grated lemon zest
Directions
1. Whisk egg whites, egg, yogurt, sugar, oil, vanilla and lemon zest in a medium bowl. Whisk into dry ingredients until just moistened.

2.Lightly coat waffle iron with cooking spray. Spoon in batter and cook until waffle is crisp and golden.
