6 teaspoons Taco Seasoning1/4 cup Cider Vinegar1/4 cup Olive Oil2 Chicken Breasts, cut into 1 inch pieces1 1/2 teaspoons Brown Sugar9 cups Romain Lettuce, shredded4 tablespoons guacamole3 oz. Blue Corn Tortilla Chips
In a pan, cook the chicken pieces until no longer pink. In a bowl, whisk together the taco seasoning, vinegar, oil, and brown sugar. Pour half of this mixture into the cooking chicken and cook until slightly reduced.
On a plate, spread out lettuce. Top with chicken and guacamole. Arrange tortilla chips around the outter edge of the plate. Drizzle 2 tablespoons of the taco vinegrette onto the salad and enjoy!
