Morning Glory Muffins - Janet's version (serving=1 muffin)

Ingredients
Set #1:1 1/4 cups white flour1 1/4 cups whole wheat flour1 cup packed brown sugar2t baking soda2t cinnamon1/2t saltSet #2:2C shredded carrots1C shredded Roma apples3/4C raisins1/3C chopped pecans or walnuts1/4C flaked coconut1 (8oz) can crushed pineapple, drainedSet #3:1/3C vegetable oil1/3C apple butter2t vanilla2 large eggs2 large egg whites
Directions
Preheat oven to 350 degrees
Combine sets 1 and 2, then stir in set 3 until just moist.
Spray muffin tins for 24 muffins.
Spoon into muffin tins.
Bake 25 mins - until lightly springs back in center
(15 mins if making mini muffins)
