Low fat/low cal Chicken "fingers"

Ingredients
2 chicken breasts.5 cup Special K crushed1 tbsp parmesan cheese1 tsp garlic powder1 tsp parsley1 egg white1 tbsp sunflower oil for frying
Directions
Combine dry ingredients in a bowl including crushed Special K and mix. Dip chicken breasts in egg white then dip into the dry mixture and place on a lightly oiled sheet (I used PAM cooking spray) and place in the oven for 10-15 mins at 200C (400F).

Serve with salad, rice, potatoes, etc. YUMMY!

I didn't add any salt or pepper as we try to avoid salt and depending on the cheese you need it might be salty enough. This would be good with light ranch dressing, salsa, low-cal BBQ sauce, etc.
