Ingredients
1 Eggplant peeled and diced1 med onion diced2 small medium zucchini squash dicedmushrooms, slicedred pepper, diced1-2 cans diced tomatoes, low sodium1 carton Trader Joes low sodium vegetable or chicken broth1 tbl Olive Oil
Directions
Peel eggplant and cut into 1 inch cubes, dice squash and onion. Saute vegetables in 1 tbl olive oil. Add can of low sodium diced tomatoes and vegetable broth. Let simmer for an hour on low--or until vegetables are tender. Serve plain--or over brown rice or whole wheat pasta.
