1/2 can Refried Black Beans4 Whole Wheat Tortillas1 1/4 cups Enchilada Sauce1 cup Almond Cheddar Cheese1 ears Corn1 Avocado
Preheat oven to 350. Spray a pie pan with non-stick spray. Place one tortilla in the pan. Spread 1/3 of the refried beans onto the tortilla and sprinkle 1/3 of the corn onto the beans. Place another tortilla on top. Continue this layering until the final tortilla has been placed. Pour the enchilada sauce over the top tortilla and top with almond cheese. Bake for 15 minutes, or until warm throughout. Slice into 6 pieces and top with sliced avocado.
