Baked Potatoe Snack

These are my replacement for store-bought snacks I do a tray full and eat them for snacks over 2 to 3 days from the fridge.I do other veg as well. Onions and celery are great, carrots may have a tough skin when done but are good, parsnip is lovely. Still intend to try peppers and eggplant.
Cut small potatoes into slices about 1/4 inch thick and 1-2 inch diameter.(I use small white or red potatoes and cut them in half or thirds)
Pat dry if you like.
Cover cookie tray with oil spray or small amount of vegetable oil. Shake a bit of flavoring onto the oil. (I use garlic powder and kosher salt, or onion salt, maybe basil, maybe rosemary, even thyme)
Place potato cut side down on cookie tray. Place in 400 degree oven for about 40 minutes. Eat warm and eat cold.
